27 Nov Mini Tofu Chocolate Mousse
I wrote this recipe for a media not too long ago, it’s another week until December but I am feeling extra festive this year. And by the end of tonight, my Christmas tree will be up (hubby’s eyes rolled)!
I’ve done this recipes so many times with so many different things i.e. chilli, without orange etc… they all work very well so don’t be afraid to play around with the flavors.
Ingredients (makes 6 x 70ml cups)
– ½ cup 70% dark chocolate
– 250g silken tofu
– rind of 1 orange
– 30ml Tawny Port
– 10 strawberries
– cacao powder for dusting
Melt chocolate over a pot of boiling water (avoid water getting into the chocolate).
Place melted chocolate, silken tofu, orange rind and port into a blender, set aside.
In a small saucepan, cook strawberries in medium heat until strawberries all disintegrated. then drain the pulp and liquid using a colander. Discard the pulp.
To assemble the mousse cup, pour in chocolate mixture alternating with strawberry colts.
Dust mousse cup with cacao powder.
Refrigerate for at least one hour before serving.
